Here`s something not everyone knows: removing lactose actually makes yoghurt naturally sweeter.
That`s because lactose gets broken down into glucose and galactose by the added lactase enzyme, leaving a sweeter taste with the same grams of sugar per serve.
This allowed us to make a delicious Vanilla LF yoghurt, with the bonus of no added sugar 😎

🥞🍌🍁Maple banana Greek yoghurt pancakes🍁🍌🥞
Light, fluffy and naturally tangy from our Greek yoghurt, these pancakes make an easy breakfast or weekend brunch. Topped with fresh banana, crunchy pecans and a generous drizzle of maple syrup, they`re simple to make and guaranteed to disappear quickly 🤤🤤

◼ 250g Cyclops Greek Yoghurt
◼ 2 eggs
◼ 1 tbsp caster sugar
◼ 1 tsp vanilla paste
◼ 100g plain flour
◼ 2 tsp baking powder
◼ ½ tsp salt
◼ ¼ tsp cinnamon (optional)
◼ Butter or oil, for cooking
To Serve
◼ 1 banana, sliced
◼ 50g pecans, roughly chopped
◼ Maple syrup, to serve
-- Instructions --
◼ Whisk together the yoghurt, eggs, sugar and vanilla until smooth
◼In a separate bowl, combine the flour, baking powder, salt and cinnamon, then fold gently into the yoghurt mixture until just combined
◼Heat a lightly greased pan over medium heat and cook in ¼ cup portions for 2-3 minutes, until bubbles appear on the surface and the underside is golden
◼Flip and cook for a further 1-2 minutes
◼Stack, top with banana and pecans, drizzle generously with maple syrup & enjoy!
