๐Ÿฅž๐ŸŒ๐ŸMaple banana Greek yoghurt pancakes๐Ÿ๐ŸŒ๐Ÿฅž  Light, fluffy and naturally tangy from our Greek yoghurt, these pancakes make an easy breakfast or weekend brunch. Topped with fresh banana, crunchy pecans and a generous drizzle of maple syrup, they're simple to make and guaranteed to disappear quickly ๐Ÿคค๐Ÿคค  -- Ingredients -- 
โ—ผ 250g Cyclops Greek Yoghurt
โ—ผ 2 eggs
โ—ผ 1 tbsp caster sugar
โ—ผ 1 tsp vanilla paste
โ—ผ 100g plain flour
โ—ผ 2 tsp baking powder
โ—ผ ยฝ tsp salt
โ—ผ ยผ tsp cinnamon (optional)
โ—ผ Butter or oil, for cooking  To Serve
โ—ผ 1 banana, sliced
โ—ผ 50g pecans, roughly chopped
โ—ผ Maple syrup, to serve  -- Instructions -- 
โ—ผ Whisk together the yoghurt, eggs, sugar and vanilla until smooth 
โ—ผIn a separate bowl, combine the flour, baking powder, salt and cinnamon, then fold gently into the yoghurt mixture until just combined
โ—ผHeat a lightly greased pan over medium heat and cook in ยผ cup portions for 2-3 minutes, until bubbles appear on the surface and the underside is golden
โ—ผFlip and cook for a further 1-2 minutes
