๐ฅ๐๐Maple banana Greek yoghurt pancakes๐๐๐ฅ
Light, fluffy and naturally tangy from our Greek yoghurt, these pancakes make an easy breakfast or weekend brunch. Topped with fresh banana, crunchy pecans and a generous drizzle of maple syrup, they`re simple to make and guaranteed to disappear quickly ๐คค๐คค

โผ 250g Cyclops Greek Yoghurt
โผ 2 eggs
โผ 1 tbsp caster sugar
โผ 1 tsp vanilla paste
โผ 100g plain flour
โผ 2 tsp baking powder
โผ ยฝ tsp salt
โผ ยผ tsp cinnamon (optional)
โผ Butter or oil, for cooking
To Serve
โผ 1 banana, sliced
โผ 50g pecans, roughly chopped
โผ Maple syrup, to serve
-- Instructions --
โผ Whisk together the yoghurt, eggs, sugar and vanilla until smooth
โผIn a separate bowl, combine the flour, baking powder, salt and cinnamon, then fold gently into the yoghurt mixture until just combined
โผHeat a lightly greased pan over medium heat and cook in ยผ cup portions for 2-3 minutes, until bubbles appear on the surface and the underside is golden
โผFlip and cook for a further 1-2 minutes
โผStack, top with banana and pecans, drizzle generously with maple syrup & enjoy!
