Weeknight dinner, levelled up ✨  These Tandoori Fish Flatbreads are fresh, zesty, and ready in under 30 minutes 🙌 
Tender spiced fish, cooling herbed yoghurt, crisp greens, and tangy pickled onions all wrapped up in warm flatbread.  -- Ingredients --
▪️ 300g firm white fish fillets (e.g. tarakihi)
▪️ 2 tbsp tandoori paste
▪️ 2 lemons
▪️ 1 tbsp vegetable oil
▪️ ½ cup Cyclops Thick & Creamy 1% Fat yoghurt
▪️ 2 tbsp chopped fresh mint
▪️ 2 tbsp chopped coriander (+ extra leaves to garnish)
▪️ ½ small red onion, thinly sliced
▪️ 2 tbsp white vinegar
▪️ 1 tsp sugar
▪️ 2 soft flatbreads or naan, warmed
▪️ 1 cup baby spinach leaves
▪️ ½ cucumber, peeled into ribbons
▪️ Salt + pepper
▪️ Fresh green chilli, finely sliced (optional, for heat)  -- Instructions -- 
▪️ Cut fish into large bite-sized pieces. Mix tandoori paste with juice of ½ a lemon, toss fish to coat, and marinate 10–15 mins.
▪️ Pickle the onion: combine sliced onion, vinegar, sugar + a pinch of salt in a small bowl. Set aside to soften and turn bright pink.
▪️ Make the herbed yoghurt: mix yoghurt, mint, coriander, juice of ½ lemon + pinch of salt until smooth.
▪️ Heat oil in a non-stick pan over medium-high. Fry fish 2–3 mins per side until golden and just cooked through.
▪️ Spread yoghurt over warm flatbreads. Layer with spinach, cucumber ribbons + pickled onion.
▪️ Top with hot tandoori fish, extra mint leaves + sliced green chilli (if using). Serve with lemon wedges.  💡 Tip: Swap fish for paneer or tofu for a vegetarian twist – they soak up the tandoori flavours beautifully!  Find the full recipe on our website!
