🥝🥭Mango and Kiwifruit Bircher Muesli 🥭🥝

A bright, fruity make-ahead brekkie that’s creamy, lightly spiced and perfect for summer mornings. Prep it the night before and top with fresh fruit and Cyclops Mango Yoghurt in the morning.

Ingredients (serves 2)
▪️ 1 cup rolled oats
▪️ ¾ cup milk or almond milk
▪️ ½ cup Cyclops Mango Yoghurt plus extra to serve
▪️ ¼ tsp cinnamon
▪️ 1 tbsp sunflower seeds
▪️ 1 tbsp maple syrup
▪️ 1 small Granny Smith apple grated
▪️ 1 mango cubed
▪️ 2 kiwifruit sliced
▪️ 2 tbsp toasted coconut chips
▪️ Fresh mint

Method
▪️ Mix oats, milk, mango yoghurt, cinnamon, sunflower seeds, maple syrup and grated apple.
▪️ Cover and refrigerate overnight or at least 4 hours.
▪️ In the morning, stir and add a splash of milk if needed.
▪️ Divide into two bowls and top with mango, kiwifruit, extra yoghurt, coconut chips and mint.

Note: You can swap Mango Yoghurt for Natural Greek or Thick and Creamy. Add a little more maple syrup or extra mango if you prefer it sweeter.
