This hearty Chickpea, Tomato & Harissa Stew is full of bold, smoky flavour 🔥 and comforting texture. Served over fluffy couscous and topped with zingy herby lemon yoghurt 🍋, it’s a vibrant, satisfying dish with the perfect balance of heat & creaminess. Scoop it all up with warm pita 🫓 – no bite left behind!  📝 Ingredients
• 1 tbsp olive oil
• 1 onion, sliced
• 2 garlic cloves, minced
• 2 tbsp harissa paste (to taste)
• 1 tbsp tomato paste
• 1 red capsicum, sliced
• 1 can (400g) cherry tomatoes
• 1 can (400g) chickpeas, drained
• 1 tsp brown sugar
• Salt & pepper
• 1 cup couscous
• 1 cup boiling water
• Pinch of salt
• 1 tsp olive oil or knob of butter  🌿 Herby yoghurt
• ½ cup Thick & Creamy Cyclops yoghurt
• Handful mint & coriander, chopped
• Juice of ½ lemon
• Salt & pepper  ✨ To serve: Warm pita bread  👩‍🍳 Method
Heat oil in a pan on medium. Sauté onion 5–6 mins. Add garlic & capsicum; cook 2–3 mins. Stir in harissa & tomato paste; cook 1–2 mins. Add chickpeas, tomatoes, sugar, salt & pepper. Simmer 15–20 mins ‘til rich & thick.  Meanwhile, pour boiling water over couscous with salt & oil/butter. Cover 5 mins, fluff with fork.  Mix yoghurt with herbs, lemon juice, salt & pepper.  To serve: couscous + stew + herby yoghurt + herbs on top. Warm pita on the side. Dig in! 💛  #cyclopsyoghurt #midweekmeals #vegetarianrecipes #comfortfood #easyrecipes
