✨ Creamy Chicken Meatballs with Mash ✨
Cosy, hearty, and fresh — this dinner comes together in under an hour. Tender chicken meatballs in a creamy sun-dried tomato sauce, finished with a swirl of Cyclops Yoghurt 💛
🍴 Serves 4
⏱ 30 min prep | 30 min cook
Ingredients:
For the meatballs:
▪️ 2 tbsp olive oil, for frying
▪️ 500 g chicken mince
▪️ 1 small onion, finely chopped
▪️ 2 garlic cloves, minced
▪️ ½ cup panko breadcrumbs
▪️ 1 egg
▪️ 2 tbsp chopped chives
▪️ 1 tsp mixed dried herbs
▪️ Salt + black pepper
For the mash:
▪️ 1 kg Agria potatoes, peeled + chopped
▪️ 50 g butter
▪️ 100 ml warm milk
▪️ Salt, to taste
For the sauce:
▪️ 1 tbsp Dijon mustard
▪️ 4–5 sun-dried tomatoes in oil, finely chopped
▪️ 150 ml chicken stock
▪️ 150 ml cream
▪️ ½ cup Cyclops Thick & Creamy Natural Yoghurt
▪️ A few handfuls baby spinach leaves
▪️ 50 g grated parmesan
▪️ Handful of fresh basil + parsley, chopped
▪️ Salt + black pepper
Method:
▪️ In a bowl, mix chicken mince, onion, garlic, panko, egg, chives, dried herbs, salt + pepper. Shape into walnut-sized balls.
▪️ Boil potatoes in salted water until tender. Drain, mash with butter + milk, season, and keep warm.
▪️ Heat olive oil in a pan over medium heat. Fry meatballs in batches until golden (they don’t need to be cooked through yet). Set aside.
▪️ In the same pan, stir in Dijon + sun-dried tomatoes. Add chicken stock + cream, bring to a gentle simmer. Return meatballs, cook 8–10 mins until cooked through and sauce thickens slightly.
▪️ Remove from heat, stir through yoghurt + spinach until just wilted. Adjust seasoning.
▪️ Serve mash topped with meatballs + sauce. Scatter with parmesan + herbs.
