🍋 Lemon, Coconut & Yoghurt Slice 🍋
This no-bake Lemon Yoghurt Slice is the perfect balance of buttery biscuit base and zesty yoghurt topping. A fuss-free treat that’s great for afternoon tea, shared lunches, or anytime you’re craving something citrusy.
- Ingredients -
▪ For the base:
◾ 350g plain sweet biscuits, crushed
◾ ½ cup desiccated coconut
◾ 125g unsalted butter, melted
◾ Zest of 1 lemon
◾ ½ tsp salt
▪ For the topping:
◾ ½ cup Cyclops Thick & Creamy yoghurt
◾ 2 cups icing sugar, sifted
◾ 1 tbsp lemon juice (freshly squeezed)
◾ Zest of 1 lemon
◾ 1 tsp vanilla extract (optional)
◾ ½ cup desiccated coconut, for decorating
◾ Extra lemon zest or edible flowers (optional)
- Instructions -
◾ Mix crushed biscuits, coconut, zest, salt + butter → press into lined tin → chill.
◾ Whisk yoghurt, icing sugar, lemon juice, zest + vanilla → pour over base.
◾ Sprinkle coconut → refrigerate overnight → slice + serve.
Store in the fridge up to 4 days (if it lasts that long 😉).
